Purslane, otherwise known as portulaca (scientific name Portulaca oleracea) is a herbaceous plant known since ancient times for its therapeutic powers. Most likely of Asian origins, it was used as a medicine in ancient Egypt, while in the Middle Ages it also appeared on the table. The diuretic, purifying, thirst-quenching, and anti-diabetic properties of this precious plant can be traced back to its nutritional composition. On one hand it is considered a weed, on the other it is appreciated for its beneficial properties and for its multiple culinary uses. Purslane is quite simply an edible wild plant.

Inserting a pair of purslane stems with leaves into your salad will not only add texture and flavor to it, but will also enable you to meet your daily nutritional needs.

Purslane has juicy leaves and stems, with a flavor similar to that of rocket lettuce. You may add purslane to salads or mix it together with other vegetables, in soups. It is also very tasty in a simple plate of stuffed pasta with a vegetable cream sauce, where purslane becomes the key ingredient: it should be minced and added to the cream sauce, before adding the pasta. You can also use it in an omelette, or eat it as a side dish, sautéed in a pan and lightly seasoned with oil and lemon.
